How to define East-West, North-South traffic policies in Kong

Hi All

I want to know how can we apply east-west and north-south policies in Kong for internal traffic and traffic coming from outside.

The Kong Gateway is the location for all North-South traffic, Kong Mesh / Kuma is the location for East-West policies
