Managing Kong logs with Elastic/FileBeat

We use FileBeat to send our Kong logs to Elastic, but in a very rudimentary way; just as “flat” data, which means when viewing the log data in Kibana, each log file entry is a single field. I’m yet not very savvy about ELK (trying to learn more), but wondering if anyone has use techniques like the built-in NGINX “module” with FileBeat to perhaps parse out the Kong log data in a more readily usable form once its in Elastic.
